At J & W Seafood we pick blue crabs from March until October. Our picking operation is FDA-certified, and our facility and process are all HACCP approved. Domestic crabmeat from J & W Seafood is a handpicked product that is twice picked under black light to eliminate any shell in the product. We currently pick in the following grades:

Our domestic pasteurized crabmeat is a great alternative to our fresh product line. We offer domestic pasteurized crabmeat to offset our fresh crabmeat production when the blue crab is not being harvested. At J & W Seafood, we pasteurize our own crabmeat in-house. We have the ability to bring crabmeat from production to various lines, including retail point of sale and food service. Our production team also has the ability to quickly adapt to special marketing needs if private labeling is a concern. |

Our steamed crab production is a perfected process done by Kevin Wade himself. These excellent crabs are available in wholesale form by the bushel, ½ bushel, and 2-dozen point-of-sale packs. Our steamed crabs are known throughout the region. |
| Soft Shell Crabs |
 | |
Soft shell crabs are considered a delicacy of the Chesapeake Bay, and our soft shells are known throughout the U.S. The soft shell season begins in May for the Virginia region of the Chesapeake Bay. We have 2 shedding facilities that incorporate more than 200 soft shell shedding tanks. The bulk of the soft shell crab is shed within two weeks in May. It is during these two weeks that we process, dress, and freeze soft shell crabs to bank our inventory for the remainder of the year. During this time, we also sell live and dressed soft shell crabs throughout the U.S. We Shed Soft Shell Crabs in the Following Sizes:
